Elitist is a great source of information, albeit dry and somewhat boring to read. What we are trying to do here is address specific issues where the nuances can be important. Suci's last post is a perfect example. With that kind of information, we can make better recommendations when the time comes and provides a reference that is more readily accessable than elitist jerks.
That said, I agree with Arnasian overall that a) everyone should look this up elsewhere, at least once and b) some nuances, especially in cloth gear, affect personal taste more than actual performance. Some casters may want more crit, another needs mp5, etc. Same is true for most armour types. However where it can get thorny is with rings, necks, trinkets and especially weapons. Those item types are the ones that pose the greatest problems. Again some are easy to figure out, others are equally good for a wide range of classes, but others aren't and the itemization can make them better for one type over an other and I would like to know about these BEFORE one drops and chaos ensues.
On a side note, we're working on a more exhaustive set of loot rules which we'll post on the forums. It's going to be a work in progress for a while, so don't freak out if at first something looks bad. We'll let you know when the final test is ready.

I definitely agree about the issues with rings/necks/trinkets, but I don't think weapons are quite up there.
Starting with what I know from first-hand experience: Warriors/DKs/Ret Pallies get dibs on 2h melee weapons. Warriors cannot DW Polearms. Rogues/Enhancement Shaman get dibs on 1h melee weapons (Rogues have a monopoly on Daggers and Thrown, but can't use 1h Axes)
Feral Druids and Hunters are similar in that they only benefit from the stats of a melee weapon, not the damage, speed, or Chance-on-hit bonuses.
Feral Druids use Staves, 2h Maces, and Polearms. Hunters get dibs on Guns, Bows, and XBows, and can use Staves, 2h Axes, 2h Swords, Polearms, 1h Swords, 1h Axes, Daggers, and Fist Weapons.
I am not all too familiar with what weapons can be used by casters, but I know that there are caster Daggers, 1h Maces, and 1h Swords. They all have similar stats on them, so it's just up to what you can use. Shields can only be used by Paladins and Shaman. All other casters use Off-Hand Frills and Wands.
From a distribution standpoint, melee classes that actually hit things with their weapons should be given priority. This would give Hunters and Druids dibs on Staves since nobody else can (read: should) use them.

Blizzard also did a poor job with jewelry itemization. I can think of only TWO rings that have +STR on them and aren't for tanking, and at least half a dozen that have +AGI. This screws over Hunters, Rogues, Druids, and Shaman because DKs, Ret Pallies, and Warriors are rolling on +AGI gear for lack of +STR gear. I don't know if itemization for jewelry has been improved for Ulduar, but if it hasn't, all physical DPS classes will be rolling equally on rings and necks with +AGI.

Trinkets are a completely different game. There are tanking trinkets, healer trinkets, damage caster trinkets, shared caster trinkets, and physical damage trinkets. Pretty much half the raid will be rolling on any given trinket no matter what.
If a trinket has +HIT, then someone under the hit cap should be given priority over someone who is Hit-Capped.

I'Ve looked over rings (I'll get to necks later) and I'm happy to say there are more +str rings than simple +agi /+AP rings (5 to 2 actually, though one of the str rings could be considered tanking, or at least useful to tanks) so it may not be much of an issue. HOWEVER, our loot system still requires courtesy on the part of our raiders. Hunters can't get +str rings, so it would be nice for dks, warrs and ret pallies to pass the agi/ap rings to them, and vice versa. We may institute a loot rule that would give priority to the agi rings to hunters/rogues/enh but nothing is written down yet.
FYI if anyone is going wtf why can't hunters get +str rings, it's simply because str does nothing for hunters. All their AP come from agi.
